Lemon Thyme is a vibrant culinary herb cultivated primarily for the refreshing, citrus-infused aroma found in its tiny, rounded leaves. This distinct flavour, which perfectly blends the earthy, savoury notes of traditional thyme with a bright zest of lemon, is released instantly when the foliage is rubbed or chopped. It is traditionally used to lift roast chicken and fish dishes, and is an essential ingredient in marinades and salad dressings, where it provides a lighter, fruitier aromatic punch than common thyme.

This plant is typically grown as a low, bushy evergreen sub-shrub that forms a neat cushion, often featuring attractive golden or silver variegated leaves. It is generally hardy, though it struggles with wet roots during winter rather than the cold itself. For the best results and the highest concentration of citrus oils, plant it in a location with full sun. It is highly drought-tolerant once established and thrives in poor, rocky, or sandy soil, as it will rapidly succumb to root rot if grown in heavy, fertile, or waterlogged ground.

Top Tip

Lemon Thyme is often variegated (having two-toned leaves), which makes it as ornamental as it is edible. To keep the plant compact and the colours vibrant, trim it lightly after it finishes flowering to prevent it from becoming woody and straggly in the centre.

How to Water

Water young Lemon Thyme plants moderately to help them settle in. Once established, this plant hates "wet feet" and thrives in dry conditions. Allow the soil to dry out completely between waterings; if in doubt, it is better to underwater than overwater.

How to Plant

Plant Lemon Thyme in a warm, sunny spot with sharp drainage. It is an excellent choice for planting along the edges of paths where you can brush against it to release the scent, or in terracotta pots with gritty compost to ensure the roots stay dry.
