Dill is a versatile herb that is grown not only for its flavoursome foliage, but also for the seeds and flowers it produces. The leaves have a feathery appearance and a subtle aniseed-like flavour. They complement fish dishes particularly well and are often used in soups, sauces, and salads. Dill seeds are a popular addition to mayonnaise, adding a burst of extra flavour to sandwiches and wraps. They are also widely used in vegetable dishes, curries, and sauces.

In summer, the plants are topped by flat umbels of tiny yellow flowers. These are highly attractive to bees and butterflies, enticing pollinators into the garden. The blooms are popular for using in cut flower arrangements but are also edible and make an excellent garnish for salads.

Dill is a low maintenance herb that is easy to grow and care for. Sow Dill seeds in a sheltered, sunny spot in well-draining soil and water regularly during dry spells.

Sow Dill seeds directly outdoors from March to June. Alternatively, sow on a windowsill throughout the year. Plant out indoor sown Dill seeds from mid-May, when all risk of frost has passed and allow 30cm between plants. Harvest from May to October.
